My favourite good friday recipe is one my friend from Senegal used to make for me, its called Thebouidienne (pronounced CHEB-O-DJIN) and is considered to be one of the best dishes in Africa. I highly recommend it! Here´s where I found this recipe

    *  1 cup onions, chopped finely
    * 1/2 cup green peppers, chopped
    * 1 tsp. salt
    * 1/4 tsp. cayenne pepper
    * 4 oz. oil or margarine
    * 1 6-oz. can tomato paste
    * 3 6-oz. cans water
    * 8 1/2-lb. pieces fish fillet such as Haddock, Halibut, etc.
    * 8 wedges cabbage, 2 inches wide
    * 8 halves sweet potato
    * 1 4-oz. jar whole pimentos
    * 1 cup cooked rice
    * 8 cups cooked rice
    * hot chili pepper (from a jar)


   1. In a 6-quart Dutch oven: Sauté: 1 cup onions, chopped finely, 1/2 cup green peppers, chopped, 1 tsp. salt and 1/4 tsp. cayenne pepper in 4 oz. oil or margarine until lightly browned.
   2. Add: 1 6-oz. can tomato PASTE and 3 6-oz. cans water.
   3. Blend smooth. Lay 8 1/2-lb. pieces fish FILLET such as Haddock, Halibut, etc., at bottom of pan.
   4. Lay over fish: 8 wedges cabbage, 2 inches wide 8 halves sweet potato. Cover tightly and simmer for one hour over low heat until vegetables and fish are done.
   5. Add 1 4-oz. jar whole pimentos and cook for 2 minutes longer.
   6. In a large soup plate: Arrange 1 cup COOKED rice as a bed. Place 1 fish PORTION in the center.
   7. Arrange around the fish: 1 cabbage WEDGE, 1 sweet potato HALF, 1 WHOLE pimento, HOT chili pepper (from a jar).

Easter is a time for joy and happiness epitomising new beginnings as devotees recall the resurrection of Christ.
The word "Easter" is derived from the Norse Ostara or Eostre, the Anglo-Saxon goddess of spring, to whom the month of April was dedicated. The Greek myth of Demeter and Persephone conveys the idea of a goddess returning seasonally from the nether regions to the light of day. This is in conjunction with the festival of spring, or vernal equinox, when nature is in resurrection after winter.
Churches throughout the world celebrate Easter as a major feast ranking with Christmas, and the "hot cross bun" or boon is distributed among the faithful , usually on Good Friday. On Easter Sunday, most Christians attend church in the morning and upon returning home, the younger members of the family receive easter eggs. The type of Easter egg can vary from a simple hard-boiled egg with its shell painted in brillient hues, to the more exqusite confection with an outer shell made from marzipan or chocolate. Upon breaking them one is often delighted to find a delectable assortment of toffees and bon bons. Another Easter delicacy is the Simnel cake.

                                     POTATO CHIP COOKIES RECIPE

Ingredients:

 
1 cup brown sugar
1/2 tsp soda
1/2 cup chopped nuts
1/2 tsp vanilla
1 cup flour
1 ea egg
1/2 cup crushed potato chips
1/2 cup shortening


How to make potato chip cookies:


to begin with take a bowl and cream into it sugar, shortening and egg.
later stir in some more ingredients such as flour, soda and vanilla.
mix all these ingredients well together.
then it is time to add chips and nuts to the mixture.
with this the mixture is ready to be dropped by teaspoonfuls onto non-greased cookie sheet.
finally you should bake the cookies for about 10 minutes.

Hi

Meringue Kisses for Easter

2    Egg whites; room temperature
    1/4 ts Cream of tartar
        pn Salt
    1/2 c  Granulated sugar
    1/2 ts Vanilla extract
      4 oz Semisweet chocolate chips
 
Preheat oven to 375 F. Line baking sheet with parchment paper; set aside.

In medium bowl, with electric mixer on medium speed, beat egg whites until frothy; add cream of tartar and salt. Beat on high speed until stiff; beat in sugar 1 tablespoon at a time. Add vanilla; fold in chocolate chips.
 
Drop batter by heaping teaspoonfuls onto prepared baking sheet. Place in oven. Turn oven off; leave cookies in oven 5 hours.

I love Ghobi Manchuria.
   1. Cauliflower - 1 medium sized
   2. Onion - 1 medium sized
   3. Ginger - 1/2 cup
   4. Garlic - 1/2 cup
   5. Oil - 1 tsp, for frying
   6. Salt - as per taste
   7. Coriander leaves - few leaves to garnish
   8. Cumin seeds - 1 tsp
   9. Green chillies - 2 chillies
  10. Coriander powder - 2 tsp
  11. Red chilly powder - 1 tsp
  12. Plain flour - 1 cup
  13. Corn flour - 2 tsp
  14. Soya sauce - 1 tsp
  15. Curry leaves - small quantity
  16. Milk - 1 tsp

   1.   Soak cauliflower floretts in hot water for 10 minutes.
   2. Then boil in in plenty of water, to which 1 tsp. of milk has been added. Drain and pat dry on a clean cloth.
   3. Mix the plain flour (Maida), oil, and corn flour and make them to paste.
   4. Make ginger garlic paste and add to this. Mix them well. Now dip these floretts in this flour paste and deep fry in oil.
   5. Keep them on a tissue paper so that excess oil will be absorbed.
   6. Now heat oil in a pan/kadai (It can be done in the same kadai in which the floretts are fried) and add ginger and garlic which are chopped, add cumin seeds, curry leaves, chopped onions, little salt and fry them well.
   7. Now add soya sauce and then the floretts which are dipped. Now add chilly powder and coriander powder and mix them well.
   8. Garnish with coriander leaves and server hot.
