every time i make biscuits they turn out more like little briquettes.  they are flat and tasteless.  can anyone tell me how to make fluffy biscuits that actually taste good?

Not sure as to why the biscuits aren't turning out well, may help if you tell us what recipe you're using? Try this recipe for crunchy peanut butter cookies- they're light and crumbly but totally gorgeous to eat - http://www.eatthechef.com/recipe.aspx?id=93 Hope that helps!

Catlady2, what type of biscuits are you trying to bake?You might want to try something new and I can tell you first hand that the recipe below is rather delicious. Let me know how you get on...

Chocolate Tipped Stars


Ingredients:

65g / 2 ½ oz butter, softened
50g / 2oz Tate & Lyle Fairtrade Caster Sugar
50g / 2oz Lyle’s Golden Syrup
1 (size3) egg yolk
12.5ml ½ tbsp milk
175g / 6oz plain flour
2.5ml / ½ tsp bicarbonate of soda
5ml / 1tsp ground cinnamon
10ml / 2tsp ground ginger

To decorate

100g / 4oz Fairtrade plain chocolate, melted
hundreds and thousands
a little grated Fairtrade chocolate

Instructions:

1. Cream together the butter and cane sugar until light and fluffy, then beat in the syrup, egg yolk and milk.

2. Sift together the flour, bicarbonate of soda and spices and fold into the creamed mixture.

3. Lightly knead the dough on floured surface. Wrap in cling film and chill for 30 minutes. Then roll out to 5mm / ¼ in and cut into star shapes using a 5cm / 2in star shape cutter and place on parchment paper lined baking trays.

4. Bake in preheated oven at 180°C/350°F/Gas 4 about 8-10 minutes or until golden brown. Allow to cool slightly before transferring to a wire rack to cool completely.

5. To decorate, brush the tips of each star generously with chocolate and dip into the hundreds and thousands and grated chocolate. Place on a wire rack to set.

Hello friends

When Hubby and I first got married one of the things that he wanted me to cook for him was homemade biscuits. I had never made biscuits before, as far as I was concerned biscuits were something that you bought at the store in a can. However that just wasn’t the same for Hubby. In fact he told me that he knew how to make biscuits and when I learned how to make biscuits for him then he would make his biscuits for me.
Learning how to make biscuits from scratch was a struggle for me. I used Bisquick and several package mixes but they always came out heavy and hard as rocks. I got really discouraged and gave up, Hubby had to settle for 2nd best with frozen biscuits.
Then in early 2002 I was able to quit work and become a stay at home wife. With the realization that I had way to much time on my hands; I found that I needed to find something to do to occupy not only my hands but my mind too. That’s when I discovered that I really didn’t hate cooking as much as I always had thought I had.

I can't give you advice how to make fluffy biscuits,but for the simple and good taste you could try vanilla Smiley

Hi guys

When I was a child I loved heat and serve rolls. I would beg my Mom to buy these instead of making homemade. Now that I have kids, and love baking, I can't imagine what I was thinking!Homemade biscuits are so easy to make, and if you follow a few simple rules, they will always turn out fluffy and delicious. I use what I call the Grandma Method. I don't use a pastry cutter, or a fork, I use my clean hands to work in the butter with the flour. It's messy, but it works for me. Whether you do this or another method, it's important not to overwork your biscuit dough. Mix until it's all moistened, and then GENTLY fold it over rather than kneading, then roll it out, or pat into shapes.

This is funny, but my biscuits ware always tasteless too... so I decided to make cookies, the were much better Smiley
But now that you reminded me, I think I'm going to try it again!

I used to really enjoy hot fresh homemade buttermilk
biscuits. Split one open and spread some fresh butter
(actually, we always used margerine), or slip in a
fresh sausage patty. There's nothing better!

After I learned to make them I also enjoyed just getting
my hand dirty as I kneaded the dough. Kids have fun in
the strangest way. Anyway, here is how my grandma used
to make them. I don't think the store-bought, canned
biscuits will ever even begin to compare.
